Care & Handling
Look for eggplant that is firm, glossy and deep in color. Avoid eggplants that have any bruises or cuts.
Eggplant is highly perishable and is best when used within a few days of purchase. Store eggplant in refrigerator or in a cool, dry place.
Cut off green stem and chop eggplant into cubes, slice into discs or cut in half lengthwise. Eggplant can be prepared in a variety of ways baked, broiled, grilled, fried or more! Removing skin is optional.
